View Full Version : Veggie pumpkin paté

you will need:

1lb pumkin flesh, peeled
1tsp vegetable oil
1 small onion, chopped finely
1/2 orange pepper, deseeded and finely chopped
2 medium eggs, beaten
3 tbsp natural yogurt
4oz hard cheese, grated
2 oz wheatgerm
1tbsp fresh chopped oregano
salt and pepper

Cut the pumpkin flesh into cubes and place in a pan of boiling water, Simmer for 20 mins or untill tender. Drain and mash well to form a puree.

Fry the onion and pepper untill softened.

Mix together pumpkin, fried onions and peppers, eggs and yogurt. Then add the cheese, wheatgerm and oregano. Season well with salt and pepper.

Spoon blended mixture into oiled oblong loaf tin. Stand the loaf tin in a baking dish which is half filled with hot water. Place in preheated (180 centegrade) oven and cook for one hour or untill firm.

Chill for 30 mins before turning out onto a serving plate.

Serve with crusty bread and salad.

Is there anyway this could be made without egg? and I assume this works with squash nicely as well as pumpkin... sounds like a good sandwich filler if theres a good egg replacement :)
