View Full Version : Vegan mmmm 'quinoa paella'

yummm i've made this a couple of times now and it tastes better the more you do it ! i found this recipe on the net but adapted it slightly..
it's bloody easy and full of goodness.. costs about a fiver and serves loads/lasts ages!! (tastes brilliant cold or reheated) :) :)

ingredients:

3 cups quinoa
2 onions
3 cloves garlic
2 peppers
1 aubergine
1 courgette
some mushrooms
1 chilli (if you like heat!)
1 tin cannelinni beans
2 tins chopped tomatoes
3 cups veg stock
cayenne pepper - dash
paprika - 2- 3ish teaspoons
cumin - 1-2 teaspoons
half a teaspoon saffron strands
(all spices to taste really!)

how to ! :

rinse quinoa
chop all veggies up into chunks
oil in a pan.. saute onions, garlic, peppers, aubergine, courgette, mushrooms,
add saffron strands to a little hot water and smush up a bit
add quinoa and saffron to the pan
2 minutes..
add paprika, cumin, cayenne,
add tins of tomatoes, beans, veg stock
bring to boil
reduce heat
cover and cook on low heat for 20 mins

simple as.. and a lovely filling meal :D

it looked like "guinea piggila" from a distance, I was about to rant how it wasn't veggie :o


I've heard quinoa mentioned a lot, what is it exactly?

lol do you ever not have guinea pigs on the brain!?
quinoa is .. um.. nice ! and really easy to cook - with the paella you basically just shove it all in a big pan and forget about it for half an hour :)

so basically, quinoa is like, a pule/rice thing?? i was wondering what it was aswell, can you just buy it from the supermarket??

I buy my quinoa from my local health shop, the organic grenovita kind.
It's actually a seed but cooks like rice and is just as versatile.
It's a really great nourishing food as it contains all 8 essential amino acids (so great if your veg*n) and also contains good amounts of phospherus, iron, zinc and magnesium.
I like to put it in my stir-fries and tastes great with a veg*n curry.

That sounds really nice. I've got some quinoa and have been wondering what on earth to do with it. I'm going to try it at the weekend.
