yummm i've made this a couple of times now and it tastes better the more you do it ! i found this recipe on the net but adapted it slightly..
it's bloody easy and full of goodness.. costs about a fiver and serves loads/lasts ages!! (tastes brilliant cold or reheated) :) :)
ingredients:
3 cups quinoa
2 onions
3 cloves garlic
2 peppers
1 aubergine
1 courgette
some mushrooms
1 chilli (if you like heat!)
1 tin cannelinni beans
2 tins chopped tomatoes
3 cups veg stock
cayenne pepper - dash
paprika - 2- 3ish teaspoons
cumin - 1-2 teaspoons
half a teaspoon saffron strands
(all spices to taste really!)
how to ! :
rinse quinoa
chop all veggies up into chunks
oil in a pan.. saute onions, garlic, peppers, aubergine, courgette, mushrooms,
add saffron strands to a little hot water and smush up a bit
add quinoa and saffron to the pan
2 minutes..
add paprika, cumin, cayenne,
add tins of tomatoes, beans, veg stock
bring to boil
reduce heat
cover and cook on low heat for 20 mins
simple as.. and a lovely filling meal :D
