View Full Version : Vegan Mixed mushroom,baby corn,mange tout n thyme risotto!

This recipe can be adapted to include whatever ingriedients you like as the method will be
the same!
Ingriedints For 2 people!
Mixed mushroom cut into wegdes!(whatever you have got or can afford!) 500gms
1 red onion diced finely
1/2 a packet carnelli rice better than aborio!
2 garlic cloves chopped finely! Not crushed!
I packet babycorn cut 2cms long and mange tout cut the same!
I bay leaf!
1/2 a packet fresh thyme chopped finely!
1 organic kallo brand veg stock cube!
1 glass white wine or decent cider!
olive oil
crushed geo organic sea salt
cracked pepper
1 tsp sugar!
1 tablespoon balsamic vinegar!
Method - Put on medium pot of water with i taespoon of sea salt and crumbled stock cube ! Boil and laeve on low heat!
sweat mushroom and red onion in large fry pan in olive oil!With bay leaf!
until mushroom has decreased in size by 2 thirds and onion is caramalized!
Add baby corn and mange tout toss a couple of times!
Add rice and garlic!
COOK OUT for at least 2 mins until rice is translucent! Add thyme and cracked pepper ,toss a couple of times add sugar and deglaze with balsamic vinegar! Cook out untill vinegar has disappeared about 1 1/2 mins! Add wine/cider cook out the same until rice has absorbed! Then add stock one ladel at a time just covering the rice but not swimming!
YOU MUST STIR CONSTANTLY NOW BUT SLOWLY AND ALL OVER THE PAN!
This is because as the rice stirs the grains brush one another and release there starch and so it cooks evenly!Keep adding stock when the last lot has been soaked up by the rice! Test it is cooked by picking one grain and pinching it between your thumb and forefinger nail! when there is no more
white it is cooked! Taste for seasoning add as required! You should have had enough salt in the stock though! Also the risooto should be slightly wet and supple not dry!
DO NOT ADD CHEESE TO THE RISOTTO ! IT WILL MAKE IT TIGHT AND HEAVY!OR CREAM!
THIS IS AN ENGLISH THING AND NOT DONE IN SICILY!
Serve and add shaved parmagano regiano over the top!(optional)

I spelt the name of the rice wrong it is ! Carnarolli rice!
