OR: cheesy bread and butter pudding

1 tablespoon wholegrain mustard
8 slices bread
2 sliced tomatoes
6 oz strong veggie cheese, grated
4 eggs, beaten
1 pint milk
1 teaspoon dried basil
Salt & Pepper

Spread mustard on 4 slices of bread, top with tomato and cheese, then make into sandwiches with the rest of the bread.
Cut into quarters diagonally and place in a greased shallow dish, point up.
Beat the eggs and milk together then add basil and salt & pepper. Pour over the sandwiches and leave to stand for at least 30 mins.
Bake for 45-50 mins at Gas Mark 4.

This is a great one for using up left overs and stale bread. Its quite quick to make but looks like you've gone to loads of trouble!
