200g pack of chestnut
2 carrots
1 large parsnip
2 leeks
1 red onion
veggie boulion powder
100g pine nuts
200g goat cheese (optional)
fresh herbs of your choice

serves 4-6

pre heat oven 180C

peel and chop the veg, place in a pan, just cover with water and bring to the boil, simmer until all of the liquid is gone.

chop up the chestnuts and herbs

mix all the ingredients other than the cheese together in a large mixing bowl.

spoon half the mixture into a loaf tin and top with half the cheese, spoon in the rest of the mixture and top with the rest of the cheese.

roast in over for about 30-45 minutes
