View Full Version : Vegan Spinach & Potato curry

Yum-I could eat this every day
Takes just over an hour
you will need

Large tin spinach puree
Large onion
3 cloves garlic
Potato (or sweet potato if allergic to potato)
Garam masala
Powdered coriander
Powdered cumin
Mild Madras curry powder (or medium)

Slow fry chopped onion and garlic 5 mins
Add 1 teaspoon each of Garam masala, curry powder, cumin and coriander mix in and slow fry a further 2 - 3 mins
Add drained spinach and cooked diced potato
Cook on low for an hour with occasional stir (try and wait the hour, not as nice if you don't)

It's gorgeous and it makes your house smell lovely! Enjoy!

Spinach puree? could you substitute that with fresh spinach?

Yes,:waves: but it takes a LOAD of fresh spinach to equal the amount in a large tin and it does taste different, no worse or better, just different

Sounds great except for curry powder :vomit:
1 1/2 lb (700g) potatoes
1lb (450g) fresh spinach (weighed without stalks) or frozen thawed
1 medium onion
1 tsp grated fresh ginger root
2 garlic cloves
1/2 tsp turmeric powder
2 tsp cumin seeds
1 tsp red chilli powder (or to taste, and depending on its heat!)
2 medium tomatoes
This is a similair recipe but I always add mustard seeds too

I was served a spinich and potato curry in Hay on Wye once many years ago! I still have a fond memory of it because it was the nicest thing I had ever eaten...must go back there again! :waves:

my version of spinach and potato curry but with chickpeas too

1 or 2 large sweet potatoes or normal potatoes
1 large courgette
1 bunch spring onions ( 1 onion or a leek will do)
mushrooms about 2 handfulls or however many you like really
about 3 big handfulls of spinach
1 tin chickpeas
fresh coriander
curry paste
coconut cream/milk

chop onion/leek into little pieces and start frying in a bit of oil,
peel and chop sweet potato and add to onion with the courgette and mushrooms, once they start frying add about half a mug of water, about a tablespoon of curry paste and cover, for abut 5 minutes.
meanwhile wash the spinach and drain the chick peas, add to curry mixture with a tin of coconut milk/ cream. leave uncovered and stir frequently depending on the consistencly it may need a bit more water. leave for about 15 20 minutes until the sweet potato is soft, add lots of chopped fresh corriander and serve with rice or naan bread. tastes even nicer the next day.
