View Full Version : Veggie Mushroom Carbonara - of sorts!

So this is my version of a carbonara, adapted over time to suit our tastes.

Ingredients:
Serves 2

Garlic
Chilli
Mushrooms
Fresh Basil
Parmesan
1 egg
Cream
Spaghetti

Method:

Start to cook spaghetti.
Chop lots of garlic and as much chilli as required. Gently fry in olive oil for 1-2 mins.
Add chopped mushrooms (you'll need lots as they reduce down)
Cook over a lowish heat, adding some chopped basil and salt & black pepper.
When liquid starts to come out of the mushrooms, add the cooked (and drained) spaghetti. Mix well.
Beat the egg with the cream (not too much but you can add more later if you wish) and add to the mxture - stir in fully. Keep stirring until the egg's cooked.
Serve with a hearty sprinkling of basil and parmesan.

I like this dish quite dry but you can add some stock with the mushrooms if you want it more moist. More olive oil can be added during cooking too, and sometimes I add some parmesan during cooking.

It works well with some steamed kale and runner beans on the side!

This is seriously delish. I advise shoving as many chilies in there as you can handle, coz it's better HOT!!!
