I nabbed this off an Australian tv chef who loved olive oil and garlic!!!
Ingredients:
Garlic
Courgettes - grated
Parmesan
Pasta
Salt
Black pepper
Method:
Chop, crush and slice heaps of garlic. Cook gently in oil.
Add grated courgettes to the pan, pour over more olive oil.
Cook gently over a low-med heat.
Once cooked, add the pasta.
Add parmesan until melted and serve!
Add salt & pepper throughout cooking.
Courgettes don't need a lot of cooking so don't over cook them. They exude liquid after a couple of minutes so try not to let them lose too much.
This dish is so simple but really lovely. I've added chopped brocolli before which works well, but adapt however you want!
Serve with salad or steamed veg and garlic bread (if you're greedy! :D)
