    I had christmas dinner today. Went back to basics and made a huge nut roast. Used cashews, walnuts, pine and brazil nuts, mushrooms, onion & garlic, grated carrot, olives & peppadews. Had bottom layer of the nut mix, then tangy/spicy tomatoe sauce, then stuff mix layer, then nut mix to top it off....sublime That plus loads of roast veggies and im a fat fuck!

    Spinach soup with toasted breadcrumbs, pumpkin and sunflower seeds on top and then some sweet potato and chickpea burgers, baby spinach with spicy chunky tomato sauce. Yum!
    Neva forget tht joy can b found NEwhere- wen 1 door 2 happiness closes another opens but ppl r normally so busy lookin @ the closed door tht they dont c the new door open rite in front of them

    My mum went food shopping for me today
    So I'm cooking myself a lovely veggie roast dinner.
    Nut roast, roast potatoes, roast parnsips, roast squash, Leeks in white sauce (made with pure spread, cornflour and soya milk), carrots, cauliflower and brocolli.

    I just wish it would hurry up and be cooked, I'm starving!

    Last night I made a pie!!! I fried up some onion, mushrooms & celery then added steamed sweet potato, parsnip and turnip, chucked in some aduki beans and simmered in some organic veggie ale. Oh, thickened with flour too. Filled a pie dish, then topped with pastry! Is was bloody yum - I want to make more pies!!!!

    Had a nice stirfry tonight.... quite simple.... it tasted a lot like chow mein.... noodles, beansprouts, onion, carrots, brocolli, pepper, sugarsnap peas, and soya sauce.
